My food adventures with my friends Chef Jason Peru and Candice Mohan continued in my hometown of Miami with some Haitian cuisine! Come with us as we eat authentic Haitian food at Naomi’s Garden!

Naomi’s Garden is a restaurant and lounge at the corner of three neighborhoods, including Little Haiti. Haitian food has lots of Creole and Caribbean influences, and I couldn’t wait to check it out!

They have a little window where you can place your order. You can also see the different foods they have. I could see soups, casseroles, meat, seafood, poultry, vegan options, and more.

Inside, we met the owner, Noam, who took us into the kitchen, where they were making beans, mayi (cornmeal), mayi kole (cornmeal with pinto beans, spices, etc.), rice, cabbage salad, oxtail, greens, and a spice blend called epis (which is used in nearly every Haitian dish)!

They also made a spicy, baked macaroni and cheese, which I couldn’t wait to try. There was also chicken marinating in the epis for three days before they bake it. The pieces of chicken were huge!

I couldn’t wait to try everything! There were some pickled and spicy salads, liver stew, jerk chicken, fried grouper, and more there. We got three different places so we could try as much as possible!

We headed over to to the outdoor dining hall with our plates. It’s a nice, large garden area.

The spinach stew was creamy and similar to collard greens, while the legume (veg stew) was so flavorful! The jerk chicken was so tender it fell off the bone, and the oxtail contained tons of tender, fatty meat. I had to suck out the marrow!

I loved the spicy cabbage salad. It contained a nice amount of vinegar as well. It was almost like a fresh, non-fermented kimchi! The baked chicken epis was flavorful and moist, with a crispy, roasted exterior.

Next was the mayi kolé, which were like grits with kidney beans. It was so tasty and grainy, and felt very healthy, too. I really loved the fried plantains, too.

The spaghetti with hot dogs was really tasty. The andouille sausage in it was nice, too! I loved the massive portion sizes here!

The fried grouper was a fantastic fried fish filet. There were no bones. Adding some pikliz (pickled cabbage, carrots, bell peppers, and scotch bonnets) added a crunch and some heat. It was the perfect combo!

Welcome back to my channel!!! I kept this video short and sweet for you guys who want to learn how to make Haitian spaghetti. It wasn’t until I married my husband that I learned about haitian spaghetti and I picked up on the method after watching some of the women his family cook haitian spaghetti. I also learned that people actually eat it for breakfast! As someone who came from a Jamaican family, the concept of eating spaghetti for breakfast was new to me but I embraced it once I tasted how delicious it was! Check the ingredients!
You’ll need:
3/4 of the box of spaghetti (I didn’t use an entire box, just most of it)
1 Hillshire Farm Smoked Beef Sausage
1 tbsp of salt (to salt the pasta water)
1/2 onion (red or yellow)
Handful of chopped green pepper
Handful of chopped red pepper
1 chicken boullion cube
1 large spoonful of tomato paste
1 large spoonful of epis

Learn exactly how to make haitian epis, the haitian version of green seasoning. My husband’s aunt came through with some guidance and here you have an authentic recipe complete with a tutorial showing you step by step how to make this delicious seasoning. Similar to sofrito, this haitian seasoning can be used for meat, poultry, and fish. You’ll need:
1 large green pepper
1 large red pepper
2 onions
1/2 a bushel of parsley
1/2 a bushel of cilantro
4 stalks of scallion
1 head of garlic
2 chicken bouillon
1 scotch bonnet pepper
1 tbsp all purpose seasoning
2 tbsp of extra virgin olive oil
150 mL of water, or a small mason jar of water
1 tbsp lemon juice (optional)

****NOTE: Many are trying the recipe and loving it but for some, depending on what blender they use it’s coming out runny. Omit the water. You really don’t need it!

HOW TO MAKE WHITE RICE THE HAITIAN WAY|| PERFECT WHITE RICE|| EASY


Video portion 15 servings
3 tablespoon of oil
1 green onion cut in two
2 1/2 tablespoons of salt
2 quarts of Water (2 quarts equal 9 cups)
8 cups of madam gougousse rice

1. Put a pot on the stove at medium high heat ( 6 or 7) add oil, salt and green onions. Let green onion fry for about one minute.

2. Add water and let boil, taste for salt.

3. Once water is boiling add washed rice in the same spot. Stir occasionally let cook for about 6-7 minutes

4. Once water is almost completely gone turn heat down to low (2 or 3) cover with aluminum foil for 45 minutes.

5. After 45 mins uncover and enjoy!


Smaller portion 8 servings

1 1/2 tablespoon of oil
1/2 green onion
1 1/2 tablespoon of salt
1 quart of Water (1 quart equals 4 cups)
4 cups of madam gougousse rice

Hi Everyone,

Welcome back to my channel!!! and in today's video, I will be showing you how to make Haitian Bouillon aka Haitian Beef Stew

Ingredients:

To clean the meat:

2 1/2 pound of beef
Lemon juice
Sour Orange Juice
Salt
2 limes cut in half

To Season the meat:

2 tablespoon of lime juice
2 Tablespoon of sour orange juice
3 cloves of smashed garlic
1 packet of Goya Chicken Bouillon
1 tablespoon of Sofrito
1 1/2 of Haitian Epis
1 teaspoon of garlic salt
1 teaspoon of hot sauce (OPTIONAL)

Ingredients to make the soup broth:

parsley/thyme
1 green hot pepper
2 carrots cut in half
1 half of red & green pepper
1 can of V8
1 tablespoon of Lily Butter
1 tablespoon of regular butter (YOUR CHOICE OF ANY BUTTER)
3 potatoes
1 yellow YAM
1 cup of lima beans
1 1/2 cup of spinach

Soup Dumplings (Ingredients)

3 Cups of Flour (White or Whole Wheat)
1 tablespoon of garlic salt
1 1/2 cups of water
1 tablespoon of butter


Clean beef using haitian meat cleaning method. (With lime, sour orange juice and salt) Wash the meat with cold water and repeat the cleaning process 3 times by washing the meat with the lime juice and salt and do a final wash of the meat

Marinate the beef with the seasoning ingredients and let it marinate for a minimum of 30 minutes to an 1 hour in the refrigerator.

Heat your pot on medium high heat and add the olive oil and the let the pot heat up and add your meat

Add 2 cups of water and let the meat cook for 45 minutes to an 1 hour

After that in a separate pot, boil your potatoes separately. THE REASON FOR THIS IS BECAUSE IF YOU WERE TO ADD YOUR POTATOES TO BOILING WATER FOR A LONG TIME, IT WILL MAKE THE POTATOES CRUMBLE AND MUSHY :/ SO IT BEST TO BOIL IT SEPARATELY FOR 30 MINUTES THAN ADD THE POTATOES TOWARD THE END OF FINISHING THE SOUP

After that you will brown the meat for 3 minutes before adding the water to deglaze the pan.

Add the lima beans, spinach and carrots

After that I will add one cup of water to steam and cook the vegetables and cover the pot and let it cook for 10 minutes

Next I will peel and cut the Yellow Yam before putting in the stew

MAKE SURE YOU ADD THE YAMS TO COLD WATER MIXED WITH LEMON JUICE JUST SO THE YAM WONT GET BROWN AND YOU WANT IT TO STAY THAT YELLOW COLOR

After a couple of minutes has passed, check your meat to make sure the meat has not completely dried out and add another cup of water to the meat.

While you wait for the water to evaporate in the meantime, start making your flour dumplings while your meat is still cooking with the vegetables

Please Note: DO NOT STIR WHEN THE DUMPLINGS ARE IN THE POT AS STIRRING WILL CAUSE THE DUMPLINGS TO FALL APART :/

Than after that add 8 cups of water to create the broth and then add your dumplings

After 5 minutes, add in your yam

Add parsley/thyme , green peppers, butter and hot pepper to the broth

I let it simmer for 5 minutes and add the V8 to your soup. I PREFER V8 BECAUSE IT HAS BETTER FLAVORING THAN ADDING TOMATO PASTE OR TOMATO JUICE

After that add in your already boiled potatoes to the soup and after that remove your thyme

AFTER THAT YOU ARE READY TO EAT...BON APETIT :D

GRIOT RECIPE|| HAITIAN FRIED PORK|| HOW TO MAKE GRIOT||

-Meat
11lbs pork shoulder ⭐️you will find this meat in a Caribbean store or a meat store tell them to cut it medium.

-Cleaning meat
Gloves (When dealing with pork it’s better to use gloves) (optional though)

6 limes (buy them from a Caribbean store way cheaper than getting them from Walmart/Publix)
1/2 cup sour orange juice
1/4 cup lime or lemon juice
1/2 cup of white distilled vinegar
2 tablespoons of salt
Let sit for (4 hours overnight if possible)

After 4 hours/ overnight pour boiling hot water over meat. Make sure it’s enough water to cover the entire meat. Mix meat around to make sure they are all touched by the boiling water. Let sit for 5 mins than pour out the water rinse off meat and put it in a bowl/ pot for seasoning.

-Seasoning
1 cup of epis (The best Haitian epis ever https://youtu.be/OC56aEXTcMo )
1/2 cup of mojo marinade
2 chicken flavored bouillon Maggie cube
2 tablespoons and 1 teaspoon of seasoning salt
Thyme& Parsley
2 green bonnet peppers (optional)

Let sit so seasoning can soak,overnight if possible. If u don’t have the time it’s ok. It will still be good. Boil until meat is tender. Make sure you let it cook, but don’t over cook it to where all the meat break. Mine took 1hr and 20 mins to cook on hi heat 7

Garnish
1/2 of each Belle peppers (all colors)
1 medium size onion

-Deep fry
Vegetable oil (max level of oil)
360°
If you don’t have a deep fryer use a medium pot
Fill it with oil half way heat at 7-8

⭐️Remember do not add to much meat at once to fry so the oil don’t over flow.
It is better do drop the meat than add more like you see me doing in the video. Fry for 2-3 minutes until meat get color gold and brown. DO NOT OVER FRY PLEASE! 😩

🛑 🛑Be careful when frying. WHEN COOKING GRIOT THE OIL BE POPPING! 😳🛑

🌟You can find the Maggie, Vinegar, sour orange juice, lime or lemon juice that I have in the bottle, and the mojo marinade in the Caribbean store or international/Spanish department in Walmart or Publix. 🌟

Maggie cube
1 packet of sazon
1 tomato
2 1/2 Tablespoon of epis
1 jalapenos poked with cloves
Parsley tied with thyme
Habanero pepper
Lime juice or bitter orange juice ( 2-3 teaspoon )
Oil
Salt and pepper to taste

HAITIAN FRIED CHICKEN RECIPE 🇭🇹|| HOW TO MAKE HAITIAN FRIED CHICKEN AND SAUCE

-Cleaning meat (optional)
3.3lbs of chicken drum sticks
3 limes
1 tablespoon of salt
1/4 cup of sour orange juice
1/4 cup of white distilled vinegar

Boiling water just enough to cover the entire meat

-Seasoning meat
1/2 cup of epis (Best Haitian epis https://youtu.be/OC56aEXTcMo )
1 cube of chicken flavored bouillon Maggie
1 tablespoon of seasoning salt
Parsley
Thyme
1 bonnet pepper (optional)

-Cooking meat
Cook at medium high heat 7
2 cups of water
Cook meat for about 20- 30 minutes

-Frying chicken
Oil
Deep fryer  360°
Fry for 2-3 minutes

-Making sauce
1/2 of a medium sized onion
1/2 of 1/2 of bell peppers (All colors)
Remainder of sauce that was in the chicken pot back on the stove
Medium heat 6-7
1 or 2 cups of water (depends on how much sauce you want)
1 tablespoon of tomato paste
1 tablespoon of water
Add tomato paste water mixture to pot
Let cook for about 3 minutes
Add bell peppers and onions

⭐️ If you want to you can add the fried chicken to the sauce and let it cook for about 1 minute on medium high heat 6-7( but I didn’t want to make it that way in the Video)
