On our 1st day in Cap Haitien, we decided to take a walk and see what was happening around the city. We walked through the square by Cathedrale Notre Dame de Cap Haitien (a.k.a. Our Lady of the Assumption Cathedral). The cathedral dates back to 1670, when Haiti was a colony of France. It was in this square of the cathedral that the liberation of the slaves was proclaimed on August 29th 1793. We then walked down to Cap Haitien Boulevard (Boulevard du Cap-Haitian) a waterfront strip with lots of bars, restaurants and hotels. We ran into some interesting high schoolers and captured a funny moment. Like, comment and subscribe!

Ingredients:

2 1/2lb box of conch (lambi)
2 limes
1 cup of vinegar
2 tbsp of baking soda
2 tbsp sour orange juice
2 tbsp of olive oil
2 tbsp of garlic powder
1 tbsp of hot sauce
2 branch of thyme
half tsp of black pepper
handful of celery & parsley leaves
1 tbsp of sofrito
2 tbsp of tomato paste
red & green peppers (chopped)
white onion (chopped)
haitian epis (garlic, green scallion & adobo blended together)
1 tbsp of butter
6 cloves

Directions:

Using a meat mallet, pound the conch until tenderized.

Clean the meat thoroughly and let sit for 20 minutes with baking soda rinse and repeat again a second time.

Repeat the cleaning process again with the conch but with the 2 limes

Put hot sauce, garlic powder, seasoning packet and the celery leaves and let it boil for an hour and a half in a Presto pressure cooker.

In a skillet on medium high, heat oil and brown the meat evenly for 10 mins with epic, sofrito, tomato paste, butter, red peppers , onions and cloves. Let it simmer for 30 minutes and the lambi is now ready to eat

Here's what I used to make my Haitian Spice:
6 Leaks
1 pack of parsley
2 head of garlic
2 bell pepper
fresh thyme
1 1/2 TBSP of salt
2 TBSP of black pepper
2 TBSP of whole cloves
3 Maggie cubes ( 3 large chicken bouillons)
1/2 cup of olive oil
1/2 cup of water
*Blend all together* VOILA

Hey y'all today I'll be making Haitian stew chicken. When it comes to Haitian food especially meat we do a lot to prepare it today I'll be showing you guys how to cook the perfect Haitian stew chicken with just a few step. By the way Epis is always a main ingredient in almost every Haitian dish it's very similar to sofrito the Spanish green season. Want to know how to make Epis aka Haitian secret ingredient aka Haitian seasoning. I have a a few recipes on the Channel to show you how to make Epis because you'll definitely need it if you're going to make Haitian chicken in sauce. Haitian chicken and sauce goes along great with white rice, rice and beans, boiled plantain, yams, grits, bulgur wheat just to name a few. I have plenty other Haitian food recipes on the channel do not forget to check them out if you're on a process of learning how to cooking Haitian food. INGREDIENTS
8 chicken drumstick
3 tbsp Haitian epis
salt to taste
1/4 ground cloves
2 tbsp island vibe seasoning
1/4 tsp pepper
1/2 pack sazon con cilantro
1 tsp lime juice
refrigerated for 8 hours or overnight for best result.
1 tbsp tomato paste
1 scotch bonnet pepper
3 sprigs of thyme with parsley
2 cup water
cook on medium low for about 15 minutes or until your water is dry
2 tbsp oil to sear the chicken
1 cup of water to make the sauce
1/3 red, yellow bell pepper, and onion
simmer on low for 5-10 minutes
