Welcome back to my channel!!! and in today's video, I will be showing you how to make Haitian Bouillon aka Haitian Beef Stew

Ingredients:
To clean the meat:
2 1/2 pound of beef
Lemon juice
Sour Orange Juice
Salt
2 limes cut in half
To Season the meat:
2 tablespoon of lime juice
2 Tablespoon of sour orange juice
3 cloves of smashed garlic
1 packet of Goya Chicken Bouillon
1 tablespoon of Sofrito
1 1/2 of Haitian Epis
1 teaspoon of garlic salt
1 teaspoon of hot sauce (OPTIONAL)
Ingredients to make the soup broth:
parsley/thyme
1 green hot pepper
2 carrots cut in half
1 half of red & green pepper
1 can of V8
1 tablespoon of Lily Butter
1 tablespoon of regular butter (YOUR CHOICE OF ANY BUTTER)
3 potatoes
1 yellow YAM
1 cup of lima beans
1 1/2 cup of spinach
Soup Dumplings (Ingredients)
3 Cups of Flour (White or Whole Wheat)
1 tablespoon of garlic salt
1 1/2 cups of water
1 tablespoon of butter
Clean beef using haitian meat cleaning method. (With lime, sour orange juice and salt) Wash the meat with cold water and repeat the cleaning process 3 times by washing the meat with the lime juice and salt and do a final wash of the meat
Marinate the beef with the seasoning ingredients and let it marinate for a minimum of 30 minutes to an 1 hour in the refrigerator.
Heat your pot on medium high heat and add the olive oil and the let the pot heat up and add your meat
Add 2 cups of water and let the meat cook for 45 minutes to an 1 hour
After that in a separate pot, boil your potatoes separately. THE REASON FOR THIS IS BECAUSE IF YOU WERE TO ADD YOUR POTATOES TO BOILING WATER FOR A LONG TIME, IT WILL MAKE THE POTATOES CRUMBLE AND MUSHY :/ SO IT BEST TO BOIL IT SEPARATELY FOR 30 MINUTES THAN ADD THE POTATOES TOWARD THE END OF FINISHING THE SOUP
After that you will brown the meat for 3 minutes before adding the water to deglaze the pan.
Add the lima beans, spinach and carrots
After that I will add one cup of water to steam and cook the vegetables and cover the pot and let it cook for 10 minutes
Next I will peel and cut the Yellow Yam before putting in the stew
MAKE SURE YOU ADD THE YAMS TO COLD WATER MIXED WITH LEMON JUICE JUST SO THE YAM WONT GET BROWN AND YOU WANT IT TO STAY THAT YELLOW COLOR
After a couple of minutes has passed, check your meat to make sure the meat has not completely dried out and add another cup of water to the meat.
While you wait for the water to evaporate in the meantime, start making your flour dumplings while your meat is still cooking with the vegetables
Please Note: DO NOT STIR WHEN THE DUMPLINGS ARE IN THE POT AS STIRRING WILL CAUSE THE DUMPLINGS TO FALL APART :/
Than after that add 8 cups of water to create the broth and then add your dumplings
After 5 minutes, add in your yam
Add parsley/thyme , green peppers, butter and hot pepper to the broth
I let it simmer for 5 minutes and add the V8 to your soup. I PREFER V8 BECAUSE IT HAS BETTER FLAVORING THAN ADDING TOMATO PASTE OR TOMATO JUICE
After that add in your already boiled potatoes to the soup and after that remove your thyme
AFTER THAT YOU ARE READY TO EAT...BON APETIT :D
HOW TO MAKE WHITE RICE THE HAITIAN WAY|| PERFECT WHITE RICE|| EASY
Video portion 15 servings
3 tablespoon of oil
1 green onion cut in two
2 1/2 tablespoons of salt
2 quarts of Water (2 quarts equal 9 cups)
8 cups of madam gougousse rice
1. Put a pot on the stove at medium high heat ( 6 or 7) add oil, salt and green onions. Let green onion fry for about one minute.
2. Add water and let boil, taste for salt.
3. Once water is boiling add washed rice in the same spot. Stir occasionally let cook for about 6-7 minutes
4. Once water is almost completely gone turn heat down to low (2 or 3) cover with aluminum foil for 45 minutes.
5. After 45 mins uncover and enjoy!
Smaller portion 8 servings
1 1/2 tablespoon of oil
1/2 green onion
1 1/2 tablespoon of salt
1 quart of Water (1 quart equals 4 cups)
4 cups of madam gougousse rice

Learn exactly how to make haitian epis, the haitian version of green seasoning. My husbandโs aunt came through with some guidance and here you have an authentic recipe complete with a tutorial showing you step by step how to make this delicious seasoning. Similar to sofrito, this haitian seasoning can be used for meat, poultry, and fish. Youโll need:
1 large green pepper
1 large red pepper
2 onions
1/2 a bushel of parsley
1/2 a bushel of cilantro
4 stalks of scallion
1 head of garlic
2 chicken bouillon
1 scotch bonnet pepper
1 tbsp all purpose seasoning
2 tbsp of extra virgin olive oil
150 mL of water, or a small mason jar of water
1 tbsp lemon juice (optional)
****NOTE: Many are trying the recipe and loving it but for some, depending on what blender they use itโs coming out runny. Omit the water. You really donโt need it!

Welcome back to my channel!!! I kept this video short and sweet for you guys who want to learn how to make Haitian spaghetti. It wasnโt until I married my husband that I learned about haitian spaghetti and I picked up on the method after watching some of the women his family cook haitian spaghetti. I also learned that people actually eat it for breakfast! As someone who came from a Jamaican family, the concept of eating spaghetti for breakfast was new to me but I embraced it once I tasted how delicious it was! Check the ingredients!
Youโll need:
3/4 of the box of spaghetti (I didnโt use an entire box, just most of it)
1 Hillshire Farm Smoked Beef Sausage
1 tbsp of salt (to salt the pasta water)
1/2 onion (red or yellow)
Handful of chopped green pepper
Handful of chopped red pepper
1 chicken boullion cube
1 large spoonful of tomato paste
1 large spoonful of epis

Ingredients to Clean the Fish:
2 red snapper, cut in 3 pieces
half cup of lemon juice
2 limes cut in half
salt
Ingredients for Seasoning the fish:
1 tablespoon of sofrito
1 1/2 of haitian epis
1 tablespoon of garlic salt
1 tablespoon of hot sauce
half teaspoon of black pepper
1 1/2 tablespoon of lime juice
Ingredients for Frying the Fish:
1 1/2 cup of all purpose flour
1 tablespoon of Badia complete seaonin
canola oil
Ingredients for Sauce:
2 tablespoons of extra virgin oil
2 tablespoons of tomatoes paste
1 whole onion
1 half green pepper
thyme & parsley tied together
1 tablespoon of regular butter
1 tablespoon of lily butter
6 cloves
Directions:
1. In a small container, soak fish with cleaning ingredients for at least 10 minutes. After 10 minutes, clean the fish throughly at least 3 times with lime and lemon and rinse with cold water.
2. Remove extra scales with a knife, on top of fish, near the fins, scraping around tail, near the head and take out unwanted portion inside at the base of the head.
3. Clean fish with lime halves inside and out up to the jaw, then rinse with cold water.
4. Marinate fish with seasoning ingredients for at least 1 hour.
5. In large oval plate, spread flour, pat dry fish, and dip in flour with Badia seasoning. Make sure the fish is completely covered in flour and let it sit for 10 minutes
6. In large skillet or pan, in medium high heat up, fry the fish 5 minutes on each side or until golden brown
7. After you are done frying the fish, you will prepare to make the fish sauce. On medium high heat , put the oil and add the tomato paste to make the sauce and add half a cup of water
8. Strain the leftover seasoning ingredients and add the fish juice or broth to the sauce. Put the already fried fish to the sauce to add more flavor and let it cook on medium low heat for 15 minutes.
Add the rest of the cooking ingredients and after that your fish is ready to eat !!!!!

5 CLOVES
1 GREEN HOT PEPPER
PARSLEY & THYME
INSTRUCTIONS:
In a medium pot on medium to high heat, add beans and 8 cups of water and bring to a boil. Cook beans for 1 hour and 10 minutes.
After an hour and 10 minutes has passed, remove the beans only (DONT THROW AWAY THE WATER, YOU WILL SAVE THAT FOR LATER TO ADD TO THE RICE)
Sautee the beans with the epis for 2 minutes. After 4 minutes has passed, add the coconut milk and add in the rest of the ingredients such as: goya packet, hot pepper, cloves and thyme/parsley and let simmer for 2 minutes
Now add the remaining water from the boiled beans and add it to the pot and add the butter
MAKE SURE YOU TASTE IT TO SEE IF IT NEEDS ADDITIONAL SALT (OPTIONAL)
After that wash the rice until the water runs clear and add the rice to the beans and let it simmer on medium high heat and let the water evaporate
After the water has evaporated let the rice cook for 30 minutes and once it's done remove the cloves, thyme/parsley and hot pepper.

2-3 Fresh Lime

1 Maggie Cube (Chicken Flavor)
1/2 TSP Salt
1/2 Black Pepper
1/2 Complete Seasoning
1/2 TSP Season Salt
2 Pinch of Ground Cloves
1/2 TSP Cayenne Pepper
4-6 Crushed Garlic Cloves
In the Legume:
4 Carrots
A Branch of Thyme
1/2 of a Medium Size Green & Red Belle Pepper
1/2 of a Medium Onion
2 Chayote
1/2 of a Large Tomato or a full Small to Medium size Tomato
1 Medium Size Eggplant
1 Medium Green Papaya
1/2 of a Large Cabbage
2-3 TBSP Oil
4 TBSP Butter
2-3 Cups of Water or even more(Depending on which meat you decide to add in your legume)

Welcome back to my channel!!! and in today's video, I will be showing you how to make Legume also known as Vegetable Stew

Ingredients:
3 pounds of beef shank meat
ยฝ pound of cooked shrimp
Half head of cabbage
1 Eggplant
1 bunch of watercress
2 carrots
2 chayotes
2 table spoons of tomato
Green pepper
Cloves
Parsley
Thyme
1 hot pepper
1 tablespoon of lily butter and 1 tablespoon of regular butter (You can use any butter of your choice)
1 teaspoon of all-purpose flour
Directions:
Add the eggplant, chayotes and cabbage to 5 cups of boiling water and let it cook for 45 minutes
Clean your meat with lemon, vinegar and salt and repeat the process 3 times to disinfect the meat. You will then pour boiling hot water to the meat and you will let the meat marinate. After that you will let the meat cook for 45 minutes on medium high heat. Make sure to brown the meat by adding water over time. You will then add tomato paste to the meat.
You will then add the cooked shrimp, watercress & carrots on medium high heat for 10 minutes. Make sure to add 1 cup of hot water so that way the carrots and watercress can be steamed cooked.
After 45 minutes of the eggplant, chayotes and cabbage has been cooked you will then blend the vegetables together in a blender.
PLEASE BE SURE TO ONLY HIT PULSE 5 TIMES ON YOUR BLENDER, THIS WILL HELP PREVENT THE STEW FROM BEING TOO WATERY
After you have finished blending the vegetables, you will add it to the meat. After 5 minutes has passed, you will add the butter, parsley/thyme and hot pepper and green peppers with the cloves attached.
Please be sure to add some salt to your liking and let the stew cook for 15 minutes. After about 15 minutes remove the hot pepper and the parsley. You will then add All Purpose Flour this will help prevent the stew from becoming water over time. Let it sit for 5 minutes on medium low heat and you are ready to eat !!!!!
